One thing I know about Third Day fans is that they love to eat. So let's share some favorite recipes with each other.

:D One of my favorites:

Pumpkin Pie Supreme

For Crust:
1 3/4 cups graham cracker crumbs
1/2 cup sugar
1/2 cup melted butter
Combine and press into 9x13 pan.

Combine:
4 beaten eggs
8 oz. package soft cream cheese
1 cup sugar
Beat with an electric mixer until light and fluffy.
Pour over crust and bake at 350 degrees for 20 minutes.

When cool, combine:
3/4 cup milk
2 small packages of vanilla instant pudding
2 cups pumpkin
1/4 teaspoon cinnamon*
1/4 teaspoon nutmeg*
*or replace with 1/2 teaspoon Pumpkin Pie Spice
Fold in 1 cup Cool Whip and spread over the cream cheese mixture, then top it with the rest of the Cool Whip.

OLIVE BREAD

This is a very dense and heavy bread that is best fresh out of the oven with loads of real butter (of course :P )

1 pkg dry yeast

1 T butter

1/2 t sugar

3 c flour

1 c warm water

1/2 T salt

1/2 c milk

1 c chopped olives (I use mild green from an olive bar or a combination of black and green. Do NOT use green olives from a jar. WAYYYYYY too salty)

1 T chopped fresh garlic

1 T dry basil



Dissolve yeast and sugar in H20. Let proof 10 min.

Combine other ingredients. Add yeast mix. Combine until well blended

Turn out onto floured surface and knead until smooth, adding flour as needed.

Place in oiled bowl. Cover with damp cloth and let rise until doubled. Punch down.

Place in greased loaf pan and let rise again.

Bake at 400 degrees 20-30 minutes or until browned and hollow-sounding when thumped.

EASY CHEATER'S CHOCOLATE MOUSSE

1 pkg instant chocolate pudding

1 & 1/2 c milk

1/2 container Cool Whip (I use extra creamy cool whip or the chocolate flavoured)

Mix together milk and pudding mix. Let set up. Fold in cool whip and portion into serving dishes. Refrigerate.

Would anyone happen to have a recipe for eggplant parmesan that they actually like ?

My family doesn't like veggie dishes, but my mom gave me this purple freak of the garden and I have to use it.

Eggplant parmesan was the only recipe I could think of that would disguise it good enough.

I don't have a very large ingredients list either...bad grocery month. Pleh

I have the basics....eggplant:P , bread crumbs, egg, spaghetti sauce, various types of noodles, and of course cheese.

Any ideas would be greatly appreciated.

Pasta Carbonara



Ingredients:
1 lb. Penne pasta (or pasta of your choice)
1 lb. Bacon (if you can find a 12 oz package of bacon…that is the perfect size.)
2 eggs
Parmesan cheese
Italian seasoning
Salt
Pepper

The how to:

Take ⅔ to ¾ of the bacon (depending on your tastes…I usually use about ¾ of a lb.) and cut into 1 inch pieces. Wrap up the unused bacon and use for something else! (if you can find a 12 oz package of bacon…that is the perfect size.)

Fry bacon over low heat until crisp. DO NOT DRAIN!

Cook pasta until al dente (or to desired firmness) and drain

*The goal is to have the bacon and the pasta done at the same time!*

While the pasta is still in the colander, crack the eggs into the bottom of your serving bowl and beat slightly.

Pour hot pasta right on top of the eggs and stir until incorporated. The heat from the pasta will cook the eggs.

Pour cooked bacon DRIPPINGS AND ALL right into the serving bowl with the pasta and mix thoroughly. Trust me…it will be delicious NOT greasy at all!

Season to taste with Salt, Pepper, Italian seasoning & Cheese

Serve with: an Italian green salad & a glass of sparkling white wine maybe a spumante.

If you want some meat to go with this dish…try marinating some chicken tenderloins in balsamic vinagrette salad dressing and grilling until done. Or, my personal favorite: Get some fresh local shrimp, coat them with blackening seasoning and grill until done!

I'm not a fan of eggplant, but this seems to be a good recipe (from Simply Recipes):

The trick to Eggplant Parmesan is to drain the eggplant slices of excess moisture first, before cooking. We found this recipe recently in the New York Times and adapted it to our taste (olive oil only - no canola oil, and no hard boiled egg slices as the original recipe called for).

2 lbs (about 2 large) eggplants
Kosher salt
1 28-oz can whole peeled tomatoes
1 clove garlic, peeled and minced
Olive oil
Freshly ground black pepper
1/2 cup all-purpose flour
1/2 cup fine dry breadcrumbs
4 large eggs, beaten
1 1/2 lbs of fresh mozzarella cheese, sliced into 1/4 inch rounds
1 cup grated high quality Parmesan cheese
1 packed cup fresh basil leaves

1 Cut eggplants lengthwise into 1/4 inch slices. Arrange one layer in the bottom of a large colander and sprinkle evenly and generously with salt. Repeat with remaining eggplant, salting, until all eggplant is in the colander. Weigh down the slices with a couple of plates and let drain for 2 hours. The purpose of this step is to have the eggplant release some of its moisture before cooking.

2 While the eggplant is draining, prepare tomato sauce. Combine tomatoes, garlic and 1/3 cup olive oil in a food processor. Season with salt and pepper to tasted and set aside.

3 When eggplant has drained, press down on it to remove excess water, and lay the slices out on paper towels to remove all the moisture. In a wide, shallow bowl, combine flour and breadcrumbs. Mix well. Pour beaten eggs into another wide shallow bowl. Place a large, deep skillet over medium heat, and pour in a a half inch of olive oil. When oil is shimmering, dredge the eggplant slices first in the flour mixture, then in the beaten egg. Working in batches, slide coated eggplant into hot oil and fry until golden brown on both sides, turning once. Drain on paper towels.

4 Preheat the oven to 350°F. In the bottom of a 10x15 inch glass baking dish, spread 1 cup of tomato sauce. Top with one third of the eggplant slices. Top eggplant with half of the mozzarella slices. Sprinkle with one third of the Parmesan and half of the basil leaves.

5 Make a second layer of eggplant slices, topped by 1 cup of sauce, remaining mozzarella, half the remaining Parmesan, and all of the remaining basil. Add remaining eggplant, and top with the remaining tomato sauce and Parmesan.

6 Bake until cheese has melted and the top is slightly brown, about 30 minutes. Allow to rest at room temperature for about 10 minutes before serving.

I've made soup with eggplant and it turns out quite good


EGGPLANT SUPPER SOUP

INGREDIENTS
1 tablespoon vegetable oil
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 pound eggplant, diced
3/4 cup sliced carrots
3/4 cup sliced celery
2 (14.5 ounce) cans Italian diced tomatoes, drained
2 (14 ounce) cans beef broth
1 teaspoon sugar
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup dry macaroni
2 teaspoons chopped fresh parsley
1/2 cup grated Parmesan cheese



DIRECTIONS
Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, carrots, celery, and tomatoes. Pour in beef broth. Mix in sugar, and season with nutmeg, salt, and pepper. Cook and stir until heated through.
Mix macaroni into the soup, and continue cooking 12 minutes, or until macaroni is al dente. Mix in parsley. Top with Parmesan chreese to serve.

NC fan, I saw that one too. I think I'll give it a try...course I have to buy paper towels first..Lol. It's quite sad when you need to buy a paper product just to cook a meal. Oh, well.

Indian Mulligatawny Soup
4 quarts water (16 cups)
6 cups chicken stock
2 potatoes, peeled & sliced
2 carrots, peeled & sliced
2 stalks celery, with tops
2 cups peeled & diced eggplant (about 1/2 of an eggplant)
1 medium onion, chopped
1 cup frozen yellow corn
2/3 cup canned roasted red pepper, diced
1/2 cup tomato sauce
1/2 cup shelled pistachios
1/2 cup roasted cashews
1/2 cup chopped fresh Italian parsley
1/4 cup lemon juice
1/4 cup butter
3 tablespoons sugar
1/2 teaspoon curry powder
1/2 teaspoon pepper
1/4 teaspoon thyme
1 bay leaf
dash marjoram
dash nutmeg

1. Combine all ingredients in a large pot over high heat.
2. Bring to a boil, then reduce heat and simmer for 4-5 hours or until soup has reduced by more than half, and is thick and brownish in color. It should have the consistency of chili. Stir occasionally for the first few hours, but stir often in the last hour. The edges of the potatoes should become more rounded, and the nuts will soften. Serve hot.

KFC Potato Wedges :D :D


• Shortening (for frying)
• 8 baking Potatoes, cut into wedges
• 1 cup Milk
• 1 Egg
• 1 ½ cups Flour
• 3 Tbsp. Salt (I prefer to use less)
• 1 ½ tsp. Black Pepper
• ¼ tsp. Paprika
• Garlic Powder to taste
• Cayenne Pepper (if you like them spicy!)

1. Preheat shortening to 375°F.
2. Mix the egg and milk until well blended in a medium size bowl (big enough for the milk and egg, with plenty of room to put a batch of wedges in)
3. Mix the dry ingredients in a larger bowl.
4. Put the wedges into the milk and egg mixture, and then coat well with the flour mixture.
5. Fry in your deep fryer for 3 minutes, remove from the oil and allow them to sit for 1 minute, and then cook them again for about 6 minutes, or until they’re a nice, light brown.

EDIT: LOL, I'm not sure how, but I forgot to list the salt in the dry ingredients! Oops! It's there now. ;) :P

A scrummy treat that can be rustled up quickly and eaten almost straight from the oven.

Ingredients
3½oz good dark chocolate or white choc buttons mixed with milk chocolate chunks
4½oz unsalted butter
3½oz granulated sugar
2½oz soft brown sugar
1 free-range egg
2 tsp vanilla extract
5¼oz plain flour
½ tsp baking powder
a pinch of salt



Method
1. Heat the oven to 190C/375F/Gas 5. Line two baking sheets with baking parchment. Chop the chocolate into little chunks and set aside.
2. Heat the butter in a small saucepan very gently until it has just melted. Meanwhile, put the two types of sugar into a mixing bowl. Pour the melted butter on top of the sugars and beat well with a wooden spoon.
3. Add the egg and the vanilla and beat until well blended.
4. Sift the flour, baking powder and salt into the mixing bowl and stir them in, then add the chopped chocolate.
5. Dot heaped pudding spoonfuls of the mixture over the lined baking sheets, leaving plenty of space in between them--they really spread out while baking.
6.Put the baking sheets in the oven and bake for 8-10 minutes, until the cookies are just turning golden brown.
7. Leave the cookies on the baking sheets to harden for a couple of minutes, then carefully lift up the baking parchment and transfer them to a wire cooling rack.
8. You can eat these cookies warm, but they are also good cold, and they store well in an airtight tin.

I've just made these - my house smells delicious!!

I pulled this delicious recipe off the internet. This potato salad is awesome! I bring it to alot of picnics or potlucks.

Texas Ranch Potato Salad

INGREDIENTS:
1 (1 ounce) package ranch
dressing mix
2 cups mayonnaise
3/4 cup chopped green onion 1 pound bacon slices
5 pounds unpeeled red
potatoes

DIRECTIONS:
1. Bring a large pot of lightly salted water to a boil. Add whole potatoes, and cook until tender, 15 to 20 minutes. Drain, run under cold water to cool, and chop into 1 inch cubes. Transfer to a large serving bowl, and refrigerate until completely chilled, about 2 hours.
2. In a small bowl, stir together the ranch dressing mix, mayonnaise and green onion. Cover, and refrigerate for about 2 hours to blend flavors.
3. Wrap bacon in paper towels and place on a plate. Cook in the microwave until crisp, about 15 minutes depending on the power of your microwave. Cool.
4. Stir the mayonnaise mixture into the bowl of potatoes. Crumble bacon into the bowl, and stir to distribute. Serve.

Actually, yeah. When I had my own apartment back in San Jose, I'd actually cook REAL food in there on occasion that came out pretty well.

Most of the time. Word to the wise? Chocolate Pudding is something BEST made from a box of Jello Instant Pudding, not from scratch in the microwave. :o *urp!* Tasted fine, but the texture was, um, not so fine. Never did that again. It's been 15 years and the thought of that stuff STILL makes my stomach lurch.

My daughter got this recipe from the Bisquick box. We had it last night and it was very tasty!

Quick Chicken and Dumplings

1 1/2 cups milk
1 cup frozen green peas and carrots
1 cup cut-up cooked chicken
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick® mix
1/3 cup milk
Paprika, if desired

1. Heat 1 1/2 cups milk, the peas and carrots, chicken and soup to boiling in 3-quart saucepan, stirring frequently.
2. Stir Bisquick mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture (do not drop directly into liquid). Sprinkle with paprika.
3. Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.

You can use 1 cup of your favorite frozen vegetable combination instead of the peas and carrots.
For tender dumplings, don’t overmix the dough. Mix just until moistened.

Dump Cake Recipe

This recipe is designed for kids to bake. It's incredibly easy with no mixing involved. Canned fruits are dumped into a baking pan, topped with cake mix, butter, and nuts, then baked. The result is something in between a cake and a cobbler, and amazingly delicious. Adults will also love this recipe.

INGREDIENTS:
1 (20 ounces) can crushed pineapple, undrained
1 (21 ounces) can prepared more fruit cherry pie filling
1 (18.25 ounces) box yellow cake mix
2 sticks of butter or margarine, each cut into 12 slices
1/4 cup chopped nuts (your choice - optional)

PREPARATION:
Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.

Dump undrained pineapple baking dish or pan and spread it out evenly.

Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.

Sprinkle the cake mix evenly over the cherry and pineapple layers.

Cut butter into slices with a butter knife and place slices evenly over cake mix.

Sprinkle nuts on top if you're using them.

Bake for one hour. Use heavy oven mitts to remove the dump cake from oven or let your older helper do it.

To serve, scoop cake out with a large spoon like a cobbler, and dump it on a nice plate. A scoop of vanilla ice cream is delicious with dump cake. Serve warm or cold.

My favorite baked potatoes:

I use large Idaho Russet taters
Shortening
Cracker Barrel baked potato seasoning
or salt, pepper, & garlic powder mixed together

Wash the potato, poke all over with a fork, coat with shortening, liberally season outside with seasoning, bake at 400 for an hour (might need longer if you're using really big taters!)

I made an Emeril recipie last night...Chicken Marsala! It was very good! The hardest part was finding the Marsala wine!

1/2 cup all-purpose flour
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.
Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. When the wine has reduced by half, add the chicken stock and cook for 3 minutes, or until the sauce has thickened slightly. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste. Garnish with chopped chives and serve immediately.


Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.

Yield: about 2/3 cup

Hey I have a really great recipe for chocolate chip cheesecake that i will grab out of one of my recipe books.

I will type it out and i can say it is really great, i also have two muffin recipes for you to see to.

PS for those of you who are going to bake a pumpkin or peacan pie i have recipes for them too, in the cookbook that has the cheesecake and muffins recipes.


I need to sleep i have church in the morning so i will find the recipe book and copy the recipes sometime tommorrow. :cool:

As promised here the recipes i mentioned:


Chocolate Chip Cheesecake

1 1/2 cups crushed Oreo cookies (about 18 cookies)
1/4 cup margarine
3 (8oz) packages cream cheese softened
14 oz can sweetened condensed milk
3 eggs
2 tsp vanilla
1 cup miniature chocolate chips
1 tsp. flour

Heat oven to 300F. In small bowl, thoroughly combine crumbs and margarine.
Press on bottom of spring form pan. In large mixer bowl, beat cream cheese until smooth, blend in milk, eggs, vanilla and flour. Reserve 1/4 cup chocolate chips. Stir remaining chips into cream cheese mixture. Pour into spring form pan. Sprinkle with reserved chocolate chips. Bake about 1 hour or until firm to the touch.

First Muffin Recipe

Mrs. Beasley's Apple Muffin's

2 cups flour
2 1/2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
2 eggs
1 cup oil
1 cup sugar
1 tsp vanilla
* 2 pippin apples, peeled and chopped
chopped nuts

Mix dry ingredients. Mix wet ingredients. Mix together. Add apples and nuts. Bake at 350oF in greased and floured muffin pans, mini pans 15 to 20 minutes or regular miffin pans for 30 - 35 minutes. Test with a tooth pick to make sure they are baked through. After they cool on a wire rack I dip them into butter and then cinnamon/sugar mixture.

*Pippin apples are big round apples that are slightly tart.

2nd Muffin Recipe


Sunday Morning Muffins
Makes 1 dozen

1 cup sour cream
1/4 cup butter, melted
1 egg, beaten
1 cup bran flakes
1 cup flour
1/3 cup sugar
1 tsp. cinnamon
3/4 tsp. baking soda
1/2 tsp. salt
1 cup apples, chopped

Combine sour cream, butter and egg. Add bran flakes, let stand until softened. Add combined dry ingredients, mixing just until moistened. Fold in apples. Spoon into greased medium- size muffin pan, filling each cup 3/4 full.
Bake at 400oF for 25 minutes.



Variation: Fold in 1/2 cup chopped nuts with apples.

And last but in no means least: For those who want to bake a pumpkin or pecan pie Here are the recipes including a pie dough recipe

1st Chef Berger's Favorite Pie Dough

1 pound of lard
4 1/2 cups of flour. all purpose
1 egg
1 Tbsp. vinegar
4 oz 7-Up or Sprite water will do
1 pinch of salt

Mix flour and lard with pastry knife till pea size flour and lard kernels form. Mix egg, vinegar, salt and liquid and pour into flour and lard mix together only until a mildly sticky dough is formed. Let rest 10 minutes and roll to 1/4 inch thickness.

2nd Pecan Pie

225g butter
450g sugar
6 eggs
360ml. golden syrup
500g pecan
some salt
2 orange zest
1 tsp. vanilla

Mix all ingredients well, except pecans. Spread pecans in pie dough (see chef berger's pie dough recipe) mixture, bake at 350oF for 45 - 50 minutes.


3rd and lastly Pumpkin Pie

500g pumpkin puree
3 eggs
4 oz sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp ground cloves
300g evaporated milk

Mix all ingredients well, pour into above pie dough bake at 350oF for 45 - 50 minutes.

So there you have it the recipes i promised enjoy them the come from the mother's choice cookbook.

These all sound so yummy! Except the eggplant *Eden's forbidden fruit perhaps?*.

Anyway, here's my all time favorite Thanksgiving recipe.

Eggnog :P

6 large eggs, separated
1/2 sugar
1 quart homogenized milk *I use whole milk, it's thicker and more flavorful*
2 cups heavy whipping cream
Nutmeg to taste

Beat the egg yolks and sugar in the bowl until completely blended. Slowly beat in the milk, then stir in the cream. Refrigerate. Beat the egg whites on a platter until they stick and form soft peaks. Scrape the whites into the mixture and blend some in with a few deep strokes of a spoon. Sprinkle nutmeg over the surface.

*I personally don't do the egg whites on top. It's more for looks than anything. Also, I mix nutmeg into the mixture while I'm preparing it. Of course, I love nutmeg and put it in everything. You can even put cinnamon and or cloves for extra spice.*

Philly 3 step Cheesecake

2 8 oz packages of Philly cream cheese *or any brand*, softened
1/2 cup sugar
2 eggs
1/2 tsp Vanilla flavoring

Mix all ingredients together until well blended.

Pour into ready made graham cracker crust.

Bake at 350 for 50 minutes or until center is set.

*My cheesecake secrets: whip mixture with blender for extra long, say another 10 minutes for a really fluffy pie....add extra vanilla, up to 2 tablespoons for lots of extra flavor! I tried these while making my cheesecakes this year and I was told they were the best they'd ever had*

I have a great recipe for a Chocolate Caramel Slice. Very yummy!

BASE:
175g butter
1 and a half cups of plain flour
3/4 cup brown sugar
3/4 cup coconut (dessicated)

FILLING:
60g butter
2 Tablespoons treacle
400g sweetened condensed milk

TOPPING:
175g cooking chocolate

BASE:
1. Melt butter in microwave on HIGH power for 1 minute 30 seconds.
2. Add the flour, brown sugar, and coconut to the butter. Mix.
3. Press the mixture into a microwave proof dish 20x29cm.
4. Microwave on HIGH power for 5-6 minutes or until the base is dry but still
soft.
5. Allow to cool.

FILLING:
1. Mix butter, treacle, and condensed milk.
2. Cook in microwave on HIGH power for 3 minutes or until it starts to set.
Stir twice during the cooking time.
3. Pour over the cooled base and spread it out evenly. Allow to cool.

TOPPING:
1. Break up the chocolate into a microwave proof bowl and cook on HIGH for
1-2 minutes or until it has melted. Stir at least once during this time.
2. Spread over the cooled caramel and chill until it has set.

Here is that Apple Cheese Cake Recipe

Apple Cheese Cake

1/4 lb. Butter
1/2 lb. Sugar
1 Tbsp. vanilla flavoured sugar or
1/2 tsp. vanilla extract
3 Tbsp. custard powder, original flavor

5 eggs
1 lemon
2lb. sour cream
1lb. apples, peeled and finely chopped

Method

Cream butter until soft.

Beat in the sugar and vanilla sugar

Gradually add eggs

Pour in juice of lemon and add some rind

Mix in the sour cream

Add the custard powder

Fold in the apples

Line a 9 1/2" round cake pan (tin) with baking paper

Pour apple batter mix in cake tin

Bake for 90 minutes at 180oC

Here are the Recipes first

Pots-au-Chocolat

75g (3oz) plain chocolate
25g (1oz) butter
yolks and whites of 3 standard eggs

1 Tbsp warm water
150ml (1/4 pt) fresh double cream

Method

Break up chocolate and melt

Add butter, stir until melted.

Beat in egg yolks, over low heat

When mixture is smooth remove from heat and stir in warm water

Beat egg whites to stiff snow and gently fold in chocolate mixture

Transfer to 4 pretty dishes and chill

Just before serving decorate with whipped cream

Pecan Fingers

1 cup butter
1/4 cup powdered sugar
1 tsp vanilla
1 tbsp water

2 cup flour
1/4 tsp. salt
2 cups pecans, finely chopped

Method

Cream butter, add sugar, vanilla and water
Add flour, salt and nuts
Chill about 1 hour in the refrigerator
Form in small rolls about the size of a finger
Place on a greased cookie sheet
Bake at 250oF for 1 hour
While still warm roll in powdered sugar

Tiramisu

500g Mascarpone cheese
500ml heavy cream
6 eggs
200g sugar

lady fingers or dry sponge cake
cocoa powder (extra bitter)
250ml freshly brewed expresso

Method

Whip mascarpone, cream, eggs and sugar together on medium speed setting till thick

Cut sponge to the shape of the serving container then dip in expresso, layer into serving container with mascarpone mixing alternating layers of sponge and mascarpone

The top layer is mascarpone dusted with coco powder

Easy Fruit Cake

For a change, try a delicious cake made in an easy, but unusual way, the boiling method

12 oz mixed fruit
4 oz sugar
4 oz butter or margarine

1/4 pint water
1 egg
8 oz self raising flour

Method

Place fruit, sugar, margarine or butter and water in pan, simmer slowly for 20 minutes. Allow to cool, then add beaten egg and stir in flour.

Turn into greased 6 or 7 inch tin, Bake in very moderate oven 300o to 325 o F for about 1 1/2 hours


Cherry Topped Cheese Pie

1 9inch graham cracker crust
1 16 oz can cherry pie filling

1 pint whipping cream
1 large package cream cheese softened
1 cup powdered sugar

Method

Beat whipping cream until peaks form, set aside. Beat cream cheese and powdered sugar together until creamy. Add whipped cream to the cream cheese and sugar mixture. Beat again until blended. Pour mixturein pie crust. Spoon the cherries on the top of pie, covering entire mixture. Chill fpr 4 - 6 hours before serving. Pie should be kept refrigerated.

French Cherry Cake

350g black pitted cherries
70g butter
70g caster sugar

70g self raising flour
3 eggs
1 glass snaps (could use Cointreau or other colorless liquor)

Method

Rub dish with butter, I use a small flan dish. Add drained cherries. Mix sugar and eggs until slightly frothy. Melt butter in saucepan and add to mixture. Add sifted flour and snaps, mix gently but well. Place in pre-heated oven gas mark 5, 375oF Cook for about 20 minutes or until mixture is firm to the touch.

Fruit Pizza

1 pkg sugar cookie dough or
1 roll of refrigerator dough
8 oz cream cheese
8 oz Cool Whip (use about 1/2 container)

1/4 cup sugar
1/4 tsp. vanilla
sliced fresh fruit (grapes, strawberries, bananas, kiwi, peaches, blueberries, etc.)

Method

Spread cookie dough over pizza style pan. Bake about 10 - 15 minutes according to package. Mix together cream cheese, Cool Whip, sugar and vanilla, spread over cookie dough. Placed sliced fresh fruit on cookie dough and serve.

Traditional English Sticky Toffee Pudding

Serves 4

3/4 cup butter or margarine
1 1/2 cups od self raising flour
1 tsp. baking powder
1 egg
1/2 cup dates, chopped
1 tsp. baking soda
1 cup boiling water (allow to cool a little)

Sticky Toffee Topping
5 tsp. demerara sugar
3 tsp. butter or margarine
2 tsp. cream

Method
Preheat oven to 180oC Cream butter and sugar, add egg and beat until smooth. Add flour and baking powder. Mix baking soda with dates and add boiling water. Add to cake mix. Pour into well greased and lined tin and bake for about 25 - 30 minutes. Cake should feel dry and spongy.

Topping
Mix all ingredients and heat gently until well blended. Pour over cake when it comes out of oven. Pop under grill for 2-3 minutes until it's bubbly and sticky (burns very quickly watch it !!) Serve hot or cold.

20- minute Chicken Parmesan
Serves 4

4 Boneless and skinless chicken breast halves (about 1lb)
1 egg slightly beaten
1/2 cup seasoned bread crumbs
2 Tbsp. margarine or butter

1 1/4 cup spaghetti sauce
1/2 cup mozzarella cheese , shredded
1 Tbsp Parmesan cheese, grated
1/4 cup fresh parsley chopped

Method

Using palm of hand flatten chicken to even thickness. Dip chicken into egg then into crumbs to coat. In skillet over medium heat in hot margarine, brown chicken on both sides. Add spaghetti sauce. Reduce heat. Cover simmer 10 minutes. Sprinkle with cheese and parsley. Cover simmer 5 minutes or until cheese melts.

Molly's Chicken and Dumplings

Chicken
1 chicken, cleaned
1 bay leaf
1 tsp. salt
1 tsp. black pepper

Dumplings
2 cups self raising flour (or 2 cups all purpose flour and 1 tsp. baking powder)
1/2 butter cut into small pieces
1/2 to 3/2 cup hot chicken broth
1/2 cup milk

Chicken
Place cleaned chicken into a large pot. Fill pot with enough water to cover chicken by 1 inch. Add bay leaf , salt and pepper. Bring to a boil over high heat, then lower heat and simmer covered until the chicken is cooked and tender, about 1 hour. Remove chicken from the pot and allow to cool. When cool remove chicken meat from the bones and shred into large pieces. Discard bones and skin. Skim fat and any scum from the chicken broth. Transfer to a 4 1/2 quart saucepan

Dumplings
Mix together flour and butter in a large heat proof bowl. Add 1/2 cup hot chicken broth to flour and butter gradually, stirring as the broth is added. Add a bit more broth if necessary for mixture to form a ball. Turn out dough onto a generously floured board. Roll dough to a thin round. Cut into strips. Bring remaining chicken broth in the saucepan to a simmer. Add dough strips to the broth strip by strip, stirring gently. Simmer covered for 20minutes. Add milk and shredded chicken to the dumplings. Taste and adjust seasonings. Cover and simmer for 5 minutes.

Ham 'N Noodle Casserole
Makes 4 (1 1/2 cup) servings

4 oz (3 cups) egg noodles
1 cup dairy sour cream
1 10 3/4 oz can condensed cream of mushroom soup
1 Tbsp. instant minced onions
dash of pepper

1 16oz pkg. frozen broccoli, cauliflower and carrots thawed.
2 cups cooked ham, cubed
1/4 cup cornflakes crumbs
2 Tbsp. margarine or butter melted

Method

Cook noodles as directed on package. Drain keep warm. Heat oven to 350oF

Grease 2 1/2 quart casserole, In small bowl, combine sour cream, soup, onion and pepper. In casserole combine cooked noodles, vegetables and ham. Pour soup mixture over noodle mixture, blend well. In small bowl, combine cornflakes crumbs and margarine, sprinkle evenly over casserole. Bake for 30 to 35 minutes or until bubbly.

Scandinavian Festival Swedish Meatballs

2 lbs. lean ground beef
4 slices bread, dampened in water
2 medium onions, grated
2 tsp. salt

1 tsp. pepper
1 can cream of mushroom soup
1 can cream of chicken soup
fill each of the soup cans with milk

Method

Combine first 5 ingredients and mix in mixer. Form about 42 to 45 small meatballs. Brown in fry pan. Combine soups and milk, pour over meatballs in a baking dish and bake 1 to 1 1/2 hours at 350oF

It's delicious serve over mashed potatoes or noodles.

4 Cheese Puffs
Makes 50 Puffs

1 loaf (1lb) unsliced white bread
1/2 cup butter
1/4 cup grated mozzarella
1/4 cup grated sharp cheddar
1/4 cup grated Swiss cheese

1 3oz package (softened) cream cheese
1/2 tsp. dry mustard
1/8 tsp. cayenne pepper
pinch of salt
2 eggs white

Method

Trim and discard crusts from top,bottom and sides of loat. Cut bread into 1" cubes. Set aside. In a saucepan combine butter and cheeses. Stir over moderate heat until melted. Add mustard, cayenne and salt. Remove from heat. Beat egg whites until stiff. Fold into mixture until well coated. Arrange on baking sheet and freeze immediately, until firm, overnight. Store puffs in freezer in plastic bags until ready to use. At serving time place frozen cubes on baking sheet. Bake at 400oF for 10 minutes until nicely browned.

Chicken in Bread Cups

12 bread slices, sides trimmed
2 Tbsp, melted butter
3 Tbsp, all purpose flour
1/2 cup evaporated milk
1/4 cup water

1/2 tsp. mustard
1/2 Tbsp. lemon juice
1/2 cup chopped celery
2 cups shredded chicken meat
salt and pepper to taste

Method

Fit the bread slices into muffin cup and bake at 350oF for about 10 minutes or until golden brown to make 12 cups. Meanwhile, melt butter and blend flour in a sauce pan, gradually add the evaporated milk and water mixture. Cook over low heat until thick and smooth, stirring constantly. Add the mustard, salt and pepper, lemon juice, chopped celery and shredded chicken and simmer for 2 minutes. Serve on bread cups. Garnish as desired.

Guacamole

2 over ripe avocados
3/4 quart carton sour cream
1 onion finely chopped

2-3 tsp Chinese chili sauce
juice of 1/2 lemon
1 tsp. mayonnaise

Method

Mash avocados with a fork then add all of the ingredients. Serve in a bowl with corn chips

Vegetable and Lentil Soup

1/2 oz butter
1 onion, finely chopped
1 garlic clove, crushed
3 carrots, peeled and chopped

3 sticks of celery, chopped
6 oz red lentils washed and drained
1 1/2 pints stock (preferably vegetable)
milk to thin the soup

Method

Melt butter, fry onion and garlic until soft. Add carrots and celery and sweat for 10 minutes. Add lentils, stir in the butter and vegetables for a few minutes. Add stock and simmer for 25 minutes. Puree in a blender until smooth. Season well with plenty of salt and pepper. Thin to preferred consistency with milk .


Curried Pumpkin Soup

1 medium onion (1/2 cup) , coarsely chopped
1 clove garlic, finely chopped
1/4 cup (1/2 stick) butter
1 can (16 oz) solid pack pumpkin
or 2 cups of homemade pumpkin puree
4 tsp curry powder
1/4 tsp salt
1/4 tsp pepper

1/2 tsp sugar
1/2 tsp ground nutmeg
1 bay leaf
4 cups chicken broth or stock
2 cups milk
1/2 cup toasted coconut

Method

Saute onion and garlic in butter in large saucepan until very soft, about 5 minutes. Stir in pumpkin, curry powder, salt , pepper, sugar, nutmeg and bay leaf. Pour in broth. Bring to boil. Lower heat and simmer for 30 minutes. Remove from heat. Discard bay leaf. Stir in milk. Reheat gently, do not boil. Garnish with toasted coconut.

Baked Fruit

1 24oz can sliced peaches
1 24oz can pineapple chunks
1 24oz can pear halves
Red & Green maraschino cherries

3/4 cup brown sugar
1 Tbsp cinnamon
1/3 cup margarine

Method

Drain fruit well and arrange in 9 x 13" shallow baking dish mix sugar and cinnamon, sprinkle on top of fruit. Dot with margarine. Bake at 325oF for 20 minutes, until bubbly. Can mircowave for 10 - 15 minutes on high. Can also add mandarin, oranges,bananas,nutmeg,al lspice,cloves etc. if desired.

This can be served with turkey and pork dishes.

Broccoli Supreme

1 egg beaten
1 10 oz pk, frozen chopped broccoli
1 can (8 1/2 oz) cream style corn
3 Tbsp margarine or butter, melted

1 Tbsp. onion, grated
1 tsp salt
1 cup herb seasoned stuffing mix

Method

Mix egg, broccoli,corn,butter, onion and salt plus 3/4 cup of stuffing mix. Pour into a 2 quart casserole. Sprinkle top with remaining 1/4 cup stuffing mix. Bake uncovered at 350oF for about 40 minutes.

Sloppy Joes

2 lbs hamburger/minced beef
1 large onion
2 cups ketsup
2 Tbsp vinegar
2 Tbsp Worcestershire sauce
1 tsp. sugar
1 tsp. mustard
hamburger buns split, toasted

Method

Cook and stir hamburger and onion in skillet until hamburger is light brown; drain. Stir in remaining ingredients except buns. Simmer for 10 to 15 minutes. Fill buns with beef mixture.

Monster Cookies

2 cups white sugar
2 1/4 cups brown sugar
1 cup shortening
6 eggs, slightly beaten
3 cups peanut butter

1 tsp. vanilla
9 cups quick oatmeal
4 tsp. soda
1/2 pound M&M's
6 oz pkg, chocolate chips

Method

Cream sugars and shortening. Add eggs, peanut butter and vanilla. Add oatmeal, soda, M&M's and chocolate chips. Use ice cream scoop to form cookies or can be dropped from a teaspoon to form smaller cookies. Bake at 350 oF for 15 minutes .

In a slow cooker assemble the following: A 3-4 lb. bottom round or rump roast, a 24 oz. package of frozen stew vegeables, a can of cream of mushroom soup a package of onion soup mix and a half can of water. Cook on high for at least 8 hours. Good with creamed Yukon Gold potatoes, and steamed cabbage. Rump roast can be hideously expensive. Watch for a sale.

In a slow cooker assemble the following: A relatively cheap cut of pork (I use a bone-in shoulder roast, about 4 lbs), enough Kraft's Original Flavor BBQ sauce to cover, and a few drops of Liquid Smoke. Cook 6-7 hours on high, or until the meat has fallen off the bone. Fish the bones out of the pot, and drain or blot off any visible grease. Add more sauce if desired. May be served as an entree, or on a sandwich with a very good colelaw on top, and maybe a little horseradish sauce. Good with brown beer if you partake. Sweet tea is good, too.

In a large dutch oven combine: 1 pound dried large lima beans, a large onion sliced, a can of chopped green chile peppers, a pound of smoked sausage, enough water to make it soupy (takes more than you think -- dried beans soak up a lot of water), and ham boullion to taste. Bring to a boil and simmer till the beans fall apart. Good with corn bread. Remember, Southern cornbread is white, not yellow, and savory, not sweet. *Note* This recipe works well in a slow cooker. Put it in before you go to bed on a Saturday night, and it will be ready for Sunday dinner (that's that meal you eat at noon). A you can probably tell, I'm in love with my slow cooker.

In a large cast iron skillet heat 1/4 cup bacon drippings. If cholesterol is an issue, substitute peanut oil. In a mixing bowl combine 2 cups white self-rising corn meal mix (NOT muffin mix -- two different things), 2 cups buttermilk, and 2 eggs. Put in any add-ons you want (corn, chili peppers, cracklings, what have you) at this point and mix well. Make sure the oil coats all inner surfaces of the skillet, then pour the excess into the cornbread batter and stir. Pour the batter into the skillet, and bake in a preheated 425 degree oven until a toothpick inserted into the center of the bread comes out clean, 30-35 minutes depending on your oven. You can put sugar in it if you like, but then it's not cornbread anymore, it's cake.

In a large dutch oven fry one pound bulk pork sausage (I like Jimmy Dean sage flavored) and two boneless skinless chicken breasts, cut in bite-sized pieces. Cook until the meat is no longer pink. Add one package Macinzie's Season blend and continue cooking until the onions in the mix are translucent. Add one cup chopped pecans (okay, I love pecans and can never stop at one cup), one can condensed cream of celery soup, and one can of ready-to-use chicken broth. Stir and bring to a boil. Add one cannister of Stove-Top Stuffing, any flavor. Remove pot from heat and stir to combine. Cover and let sit until liquid is absorbed. Mother and I had this tonight. Boy, was it ever good!

Hi there everyone well this morning when i was waiting for a friend to pick me up for church i was reading a magazine a saw some really excellent recipes and here are just a few for you

Pancakes with poached berries

Serves 4-6
Preparation 15 minutes (plus standing time)
Cooking 30 minutes

Ingredients

2 cups plain flour
3 teaspoons baking powder
2 tablespoons caster sugar
1 3/4 cups milk
2 eggs
60g butter , melted , cooled plus 20g extra melted
thick cream or yoghurt , to serve if liked

Poached berries
1/2 cup water
1/2 cup caster sugar
100g raspberries
100g blueberries
60g strawberries hulled and quartered
1 teaspoon vanilla extract

1 Sift flour and baking powder into a large bowl. Stir in sugar, Make a well in the centre.
2. In a jug, blend milk, eggs and butter together. Gradually whisk into flour mixture. Cover batter and stand for 15 minutes.

3. Poached berries , combine water and sugar in a medium saucepan. Stir over a low heat until sugar dissolves. Bring to the boil. Add berries, Cook for 1 minute. Strain berries reserving liquid. Return liquid to pan and simmer for 15- 20 minutes. until syrupy. Cool slightly before stirring berries and vanilla through.

4. Heat a large non stick pan frying pan on medium. Brush with a little extra butter. Pour 2x1/4 cup measures of batter into pan, tilting to make two circles. Cook for 2-3 minutes until bubbles begin to appear on surface.
Turn and cook for a further 1-2 minutes until golden. Cover to keep warm. Repeat with remaining batter. Serve pancakes in a stack drizzled with poached berries and accompanied with cream or yoghurt . Enjoy

Alright well a good friend of mine sent me this through text today. Its easy and at least the batter is good, I'll let you know the full verdict when mine come out of the oven.

Blondies

1 cup flour
1/8 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter, melted
1 cup packed brown sugar
1 tablespoon vanilla
1 egg
1/3 cup of walnuts *optional*

Mix em and bake at 350 for 25-30 minutes. As always I added lots of extra vanilla. Its best to grease/powder the pan before you put them in.

Berry Frozen Yoghurt

Serves 6 , Preparation: 10 minutes (plus freezing time) Cooking: none

1 egg white
2 tablespoons caster sugar
500g tub vanilla yoghurt
125g strawberries , hulled finely chopped
60g raspberries, finely chopped
75g blueberries, finely chopped
extra berries , to serve

1 In a small bowl, using an electric mixer, beat egg white until soft peaks form. Add sugar gradually until mixture is thick, glossy and sugar has dissolved.

2 In a large bowl, combine yoghurt and berries, fold through egg white mixture. Freeze for 2 hours or until almost set

3 Lightly grease an 8 x 25 cm bar pan. line base and sides with plastic wrap.

4. Break up frozen berry mixture with a spoon. Using an electric mixer, beat until smooth. Spoon mixture into a loaf pan. Cover and freeze over night until firm.

5. Serve in slices , topped with extra berries

Allow to rest at room temperature for 8 minutes before slicing. You will need 1/2 punnet of each berry. use other fruit of choice such as chopped mango and passionfruit, or mixed chopped stone fruit

Berry coconut ice slice

Makes about 16 Preparation 20 minutes Cooking 50 minutes

125g butter, at room temperature, chopped
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups self raising flour
1 teaspoon ground cinnamon, plus 1/2 teaspoon extra

3/4 cup sour cream
2 tablespoons milk
150g punnet blueberries
120g punnet raspberries
125g strawberries, hulled, chopped (see tip)
1/3 cup shredded coconut
icing sugar , for dusting

1 Preheat oven to moderate, 180oC. Lightly grease an 18x 28cm slice pan. Line base and sides with baking paper.
2 In a large bowl, using an electric mixer, cream butter, sugar and vanilla together until light and fluffy.
3. Add eggs one at a time, beating well after each addition, scraping down sides at bowl.
4. Sift flour and spice together then lightly fold into creamed mixture, alternately with combined sour cream and milk, beginning and ending with flour. Fold berries through.
5. Spread mixture lightly into prepared pan. Sprinkle with coconut.
6. Bake for 45- 50 minutes or until cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Dust with icing sugar and cut into squares. Store in an airtight container.

125g strawberries is 1/2 a punnet. This cake freezes well. Cut into portions and freeze for lunchbox treats.


another tip for the pancakes with poached berries It is possible to make these pancakes in advance. You will make about 12, Wrap and freeze any leftovers . Two more recipes coming after i have finished at the amusement park

Peanut Brownies

125g butter, softened
1 cup sugar
1 egg
1 1/2 cups plain baking flour
1 teaspoon baking powder
pinch of salt
1 tablespoon cocoa
1 cup peanuts

Cream butter and sugar until light and fluffy. Add egg and beat well. Sift flour, baking powder, salt and cocoa together. Mix into creamed mixture. Add peanuts, and mix well. Roll tablespoonful of mixture into balls. Place on greased oven trays. Flatten with a fork. Bake at 180oC for 15 minutes or until cooked. Makes 30.

Easter Biscuits or cookies for you all in america , i call biscuits cookies too.

2 cups plain baking flour
1 teaspoon baking powder
125g butter
1/2 cup sugar
1/4 cup currants
1/4 teaspoon cinnamon
1/4 teaspoon grated lemon rind
1 egg

Sift flour and baking powder into a bowl, Cut in butter until it resembles fine bread crumbs. Add sugar, currants, cinnamon and lemon rind. Lightly beat eggs. Add to dry ingredients, mixing to form a stiff dough. Turn dough out onto a lightly flour board. Roll out to 4 mm thickness. Cut out rounds using a 7 cm scone or biscuit(cookie) cutter. Place biscuits on a greased oven tray. Bake at 180oC for 20 minutes or until lightly browned.

Makes 30 .

Hummingbird cake (no real humming birds are involved in this recipe it is just a name)

Serves 12 Preparation 20 minutes Cooking 40 minutes

1 3/4 cups self raising flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground mixed spice
1 1/4 cups brown sugar
1/4 fresh pineapple, cored, chopped
2 ripe bananas, mashed
1/2 cup desiccated coconut
1/2 cup chopped peacans
1 cup sunflower oil
2 eggs, lightly beaten
icing sugar, for dusting

1. Preheat oven to 180oc. Lightly grease and line the base of a 23 cm square cake pan with baking paper.
2. Sift flour and spices together into a large bowl, Stir in sugar, pineapple, bananas, coconut and pecans. Fold in oil and eggs until combined.
3. Spread into prepared pan and bake for 35-40 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Serve dusted with icing sugar.

If liked ice cake with a cream cheese frosting, beat together 100g cream cheese, 50g butter and 1 teaspoon vanilla essence. Gradually mix in 1 1/2 cups icing sugar. Spread over cold cake, Freeze cake in small portions for up to 3 months

I will check to see what i can find regarding toad in the hole and bubble and squeak i will do a yahoo search and google search for recipes for these. and attention nurse betty lu the coffee cake recipe will be submitted here tomorrow what type of icing do you prefer with the coffee cake since this one calls for a coffee icing.

I have a HUGE Surprise for you i did do a yahoo search for recipes for both bubble and squeak and toad in the hole and i made an excellent discovery on the bbc.co.uk food web page the recipes that you were requiring and here they are for you.

Bubble and squeak

Preparation time less than 30 mins
Cooking time 10 - 30 mins, Serves 4

Ingredients
1 large king edward potato, peeled and chopped
100g/ 31/2 oz savoy cabbage, thinly sliced
1 leek, sliced
a knob of butter
salt and pepper
freshly grated nutmeg
25g/ 1 oz beef dripping

Method

1 Boil the potatoes until tender, drain and allow to get quite cool.
2. Steam the cabbage, until tender and plunge in cold water
3. Finely chop and crush the potatoes
4. In a frying pan melt the butter and fry the leeks gently, without browning until softened.
5 Drain the cabbage well and mix in the potatoes and leeks, season with grated nutmeg and salt and pepper.
6. Take tablespoons of the mixture and shape into round cakes.
7. Fry them in hot beef dripping to a good crisp golden brown on both sides.

Toad in the Hole
Preparation time 30 mins to 1 hour
Cooking time 30 mins to 1 hour Serves 4-6

Ingredients
For the batter
115g/4oz plain flour
large pinch of salt
freshly ground black pepper
4 large eggs
300ml/ 1/2 pint milk
2tbsp/ 30g fresh thyme leaves
a good quality pork, beef or vegetarian sausages
2 tbsp/ 30g of beef dripping or white vegetable fat
2 tbsp/30g Dijon mustard

Method
1 To make the batter, sift the flour into a large bowl . add the salt and pepper.
2. Make a well in the centre and break in the eggs, using a wooden spoon gradually beat the eggs into the flour then slowly beat in the milk until the batter is the consistency of double cream.
3. Strain and push any remaining lumps through a sieve, stir in thyme, cover and leave to stand for 30 minutes or ideally 3-4 hours.
4. Preheat the oven to 200oC / 400 F/ Gas 6
5. Heat a large non stick pan and cook the sausages over a medium heat until golden brown all over. If you do not have a non stick pan add a little oil turn off the heat and brush the sausages with mustard. Set aside .
6. Place the dripping or white vegetable fat into an oven proof dish and pop in the oven for 5 minutes or until the dripping is hot and hazy.
7. Add the sausages to the hot dish and pour in the batter immediately return the dish to the oven and cook in the oven for 35- 40 minutes until well risen and golden brown.
8. Serve a portion of the toad in the hole with baked beans , if you like them , seasoned with black pepper and a large knob of butter.

Nurse betty lu i am now submitting the coffee cake recipe for you

Coffee Cake

1 teaspoon instant coffee
1 tablespoon boiling water
75g butter softened
3/4 cup sugar
1/2 teaspoon vanilla essence
3 eggs , separated
1 cup plain baking flour
3 tablespoons cornflour
1 teaspoon baking powder
3 tablespoons milk
Coffee icing

Dissolve coffee in the boiling water. Cream butter, sugar, coffee mixture and vanilla until light and fluffy. Add egg yolks one at a time, beating well after each addition. In a separate bowl beat the egg whites until soft peaks form. Sift flour, cornflour and baking powder together. Add sifted ingredients to creamed mixture alternately with the egg whites. Stir in milk. Pour cake mixture into two greased and lined 20 cm sponge sandwhich tins. Bake at 190oC for 20-25 minutes or until cake springs back when lightly touched. Leave in tin for 10 minutes before turning out onto a cooling rack. Fill and ice with Coffee icing. Decorate with walnut pieces if desired.

Icing

2 cups icing sugar
1/4 teaspoon butter
2 tablespoons water approximately
1/4 teaspoon vanilla essence
Sift icing sugar into a bowl. Add butter. Add sufficient water to mix to a spreadable consistency. Flavour with vanilla essence.

Coffee icing
Dissolve 2 teaspoons instant coffee in 1 tablespoon hot water. Mix into icing sugar.

Enjoy your coffee cake

Here is an gluten free hot cross buns recipe i have found in my satellite tv guide and if you don't want to bake gluten free hot cross buns simply use a wheat based bread mix instead of a gluten free bread mix, since i am so aware of gluten intolarance that some people have so this recipe is so ideal

Gulten free hot cross buns

Ingredients

3 tablespoons dried yeast
1 3/4 cups warm milk
2 tablespoons caster sugar
3 1/4 cups gluten free bread mix
2 teaspoons ground cinammon
pinch of nutmeg
2 tablespoons ground mixed spice
1/2 teaspoon salt
60g butter
2 cups sultanas
2 eggs
1 teaspoon sugar
Warmed apricot jam, to glaze

Icing sugar crosses
1 cup icing sugar
1 1/2 teaspoons finely grated lemon zest
1/2 teaspoons lemon essence
1-2 teaspoons milk

Method
1. Place yeast, milk and sugar in a small mixing bowl. Whisk to dissolve sugar. Rest for 10 minutes.
2. Sift together Gluten free bread mix, spices and salt into the large bowl of an electric mixer with dough hooks.
3. Using fingertips , rub through butter.
4. Add sultanas, eggs and yeast mixture. Beat for 7 minutes.
5. Using a 1/4 cup dry measure scoop into generous mounds on a greased pan , making 3 rows of 4 mounds each, Rest the dough in a warm place for 45 minutes until almost doubled.
6. Preheat your oven to around 200oC(or 180oC fan bake), Use a knife to cut a shallow cross in the top of each bun.
7. Bake for 10 - 15 minutes until cooked through and browned.
8. Brush on jam while still warm.
9. Wait until the buns have cooled, then mix together the icing sugar , lemon zest, lemon essence and milk. Ice the buns in the shape of a cross.

10. Enjoy.

My mama’s Meatloaf.

Pretty simple…

1.5 lbs of Ground beef
½ cup of cracker crumbs (regular old saltines)
¾ - 1 cup of shredded cheese (I like to use extra-sharp cheddar…buy the block & shred it yourself for better taste)
½ cup milk
1 egg
1 teaspoon of garlic salt
1 teaspoon of celery salt
Chopped bell peppers & chopped onions to your liking
Dash of black pepper

Pre-heat oven to 350

Mix all ingredients thoroughly
Form a loaf & place in a roasting pan with ½ cup of boiling water (this will keep it moist!)
Bake for 1 hour (this varies…just keep an eye on it)
If Ketchup is desired for outside, apply 10 minutes before you take Meatloaf out of oven.

Yorkshire Pudding

1 cup plain baking flour
1/2 teaspoon salt
2 eggs
1/2 cup milk
2 tablespoons water
2 tablespoons fat

Sift flour and salt into a bowl. Make a well in the centre. Add eggs, lightly beat together then gradually add milk and water, mixing to a smooth batter. Chill for 1 hour. Stir again. Heat fat in a roasting dish until smoking hot. Quickly pour batter into roasting dish. Bake at 200oC for 30 minutes or until golden, well risen and crisp around the edges. Cut into squares and serve with roast beef. Serves 6.

Shepherd's Pie
1 tablespoon oil
1 onion, chopped
500g mince
2 tablespoons plain baking flour
1 tablespoon tomato sauce
1 tablespoon chutney or relish
3/4 cup beef stock
3 potatoes, chopped
1 tablespoon butter
1 tablespoon finely chopped onion
1/2 cup grated tasty cheese
salt
black pepper

Heat oil in a large frying pan. Add onion and cook, until clear. Add mince and cook until well browned, stirring constantly. Pour off excess fat. Stir in flour and cook for 1 minute. Add tomato sauce, chutney and stock. Bring to the boil, reduce heat and simmer for 5 minutes. Set aside. Cook potatoes in boiling, salted water until tender. Drain and heat for a few minutes to dry off excess moisture. Shake the pan frequently during this time. Mash potato. Add butter, onion and half the cheese , mixing until smooth and creamy. Season with salt and pepper to taste. Put mince into a pie dish. Top with potato mixture, Sprinkle with remaining cheese. Bake at 190oC for 20 minutes or until golden and heated through.
Serves 4.

The Royal Trumpeters of heaven sound the joyful trumpet sound no not the one that we are all waiting for but the trumpets sound for the joyous news that the french toast with blueberries recipe is being submitted.

Blueberry french toast

Ingredients
1 loaf whole grain bread sliced
3 eggs
3 tablespoons sugar (or 3/4 teaspoon Stevia)
1 teaspoon vanilla extract
2 1/4 cups milk
1/2 cup of whole wheat flour
1/3 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1/4 cup olive oil butter
1 cup fresh blueberries

Olive oil Butter Combine 1/2 cup extra virgin olive oil and 1/2 cup (1 stick) softened butter in a mixing bowl,blender or food processor. Blend until smooth. Chill, covered until firm.

Method

Layer the bread slices in a lightly greased 9x13 inch baking dish. Combine the eggs, sugar, vanilla and milk in a bowl, whisk until smooth. Pour the egg mixture over the bread layer, turning slices to make sure they are well coated. Chill covered for eight to ten hours. Preheat the oven to 375 degrees. Sprinkle the blueberries evenly over the soaked bread. Combine flour brown sugar and cinammon in a small bowl. Cut in the olive oil butter until clumps are the size of small peas. Layer the flour mixture over the blueberries. Bake uncovered for about 40 minutes or until golden brown. Remove from oven Garnish with additional blueberries and serve.

the recipes that i have submitted over the past two weeks came from two magazines and the new zealand edmonds cook book and sometimes my copy of the mothers choice cook book . mothers choice is a place in hong kong china where they look after young babies and children and i have a good friend who used to work there and she now goes to the states alot.

I was doing my easter shopping and yes we do have the easter bunny, and today i am delighted that it is sunny because some of my little darlings in toddlers church at my church are going to the gardens for a easter egg hunt.

3/4 cup butter flavored Crisco
1 1/4 cups firmly packed brown sugar
2 tablespoons milk
1 tablespoon vanilla

1 1/2 cups flour

1 cup semi sweet chocolate chips
1 cup pecan pieces

Mix all ingredients, bake at 375 for 8-9 minutes.

Microwave Caramel Popcorn

There is RARELY any of this left after we make it for a movie night or just whatever. Don't let the "microwave" in the name fool you - this is awesome stuff. And it's fast to make.

1 C. brown sugar
1 stick butter (softened)
1/4 C. white corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 C. unpopped popcorn
1 Brown paper sack (at least grocery size)

Pop corn and put into the brown paper sack.
Mix the brown sugar, salt and baking soda together in a microwave safe bowl.
Pour the cornsyrup on top the mix.
Lay the butter on top.
Microwave on high for 2 minutes, or until the butter is melted and the mix starts to froth up or boil.
Take out and stir to mix completely.
Microwave on high 15 seconds more.
Pour mix over the popcorn in the bag. Try to distribute it pretty evenly over the popcorn.
Fold the top of the bag, and shake very well, to evenly coat the popcorn.
Put the folded bag in the microwave.
Cook on high one minute.
Take out bag and shake well. Be careful - bag will be HOT.
Put folded bag back in and cook one more minute on high.
Shake well then pour into bowl to serve.

We love this fresh out of the bag - warm. But it's really good cooled too.

ENJOY.

Here is one of my absolute favourite dip tip things, it doesn't really have a name - but I shall call it sour cream salsa dip! It is easy as pie!

Ingredients
1 tub sour cream (low fat is fine if you want)
1 jar salsa (heat level to taste)
2 ripe avacadoes - very soft is best
grated cheese (again low fat is fine)

Directions
In a large serving dish about 6x4 inches spread the sour cream evenly over base
Mash the avacodoes (if dip not being consumed soon, sprinkle over some lemon juice to prevent browning), spread the avacadoes over sour cream
Pour salsa evenly over the top and lastly sprinkle grated cheese over top

Serve with corn chips, rice crackers, etc.

Warning, this is addictive!!! You may eat the whole lot yourself!

Ok who loves baking cakes apart from me of course well to all my fellow cake bakers i have something for, this is how you bake four different cakes from just one easy mix.

Basic Butter Cake
Prep and cooking time 1 hour,30 minutes
Butter cakes can be stored at room temperature in an airtight container for two days or can be frozen for two months

250g butter, softened
1 teaspoon vanilla extract
1 1/4 cups (275 g) caster sugar
3 eggs
2 1/4 cups (335g) self raising flour
3/4 cup (180ml) milk

1. Preheat oven to 180 o C (160 o C fan forced). Grease a deep 22cm , round or deep 19cm square cake pan, line base and sides with baking paper.
2. Beat butter , extract and sugar in a medium bowl with an electric mixer until light and fluffy. Beat in eggs, one at a time, Stir in sifted flour and milk in two batches .

3. Spread mixture into prepared pan bake for about 1 hour. Stand cake in pan for 5 minutes , turn out onto a wire rack top side up to cool.
Suitable to freeze , Not suitable to mircowave.

Marble Cake
Prep and cook time 1 Hour 30 minutes and cooling

1 quantity basic butter cake see previous recipe
pink food colouring
2 tablespoons cocoa powder
2 tablespoons milk, extra
Butter frosting
90g butter, softened
1 cup (160g) icing sugar
1 tablespoon milk

1 Prepare basic butter cake steps one and two.
2 Divide mixture among three bowls: tint one mixture pink with a little colouring. Blend sifted cocoa with extra milk in a cup stir into second mixture: Drop alternative spoonfuls of the three mixtures into pan. Pull a skewer backwards and forwards through cake mixture.
3. Bake cake for about 1 hour. Stand cake for 5 minutes turn out onto a wire rack top side up to cool.
4. Butter Frosting
Beat butter in a small bowl with an electric mixer until light and fluffy, beat in sifted icing sugar and milk in two batches Tint frosting pink with a little colouring Spread over top of cake.

Maderia Cake
Prep and Cook Time 1 Hour 15 Minutes

185g butter softened
2 teaspoons finely grated lemon rind
2/3 cup (150g) caster sugar
3 eggs
3/4 cup (110g) plain flour
3/4 cup (110g) self raising flour
1/3 cup (55g) mixed peel
1/4 cup (35g) silvered almonds

1 Preheat oven to 160oC (140oC fanforced) Grease a deep 20cm round cake pan line base with paper.
2. Beat butter , rind and sugar in a small bowl with an electric mixer until light and fluffy. Beat in eggs one at a time, Transfer mixture to a large bowl stir in sifted flours Spread mixture into pan.
3. Bake for 20 minutes Sprinkle cake with peel and nuts Bake another 40 minutes Stand cake in pan for 5 minutes turn out onto a wire rack top side up to cool.

Since you have requested the self saucing meatloaf recipe here it is for you and everyone else who would like to see it and today it is very chilly and fine

Self Saucing Meatloaf

Serves 6, Prep and Cook Time 1 hour, 15 minutes + standing

4 slices white bread, crusts removed
1/2 cup (125ml) milk
1 large (350g) red capsicum, chopped finely
1 large (200g) brown onion, chopped finely
500g beef mince
250g sausage mince
1/4 cup(60ml) barbecue sauce
1 egg, beaten lightly
1/4 cup, finely chopped fresh flat-leaf parsley
400g can diced tomatoes
125g cherry tomatoes, halved

1. Preheat the oven to 200oC (180oC fan forced) Line a shallow ovenproof dish with baking paper
2. Combine bread and milk in a medium bowl,stand 2 minutes , Squeeze bread to remove excess milk, discard excess milk.
3. Place bread,capsicum, onion, minces, sauce, egg, parsley and salt and pepper in a bowl, using your hands mix thoroughly.
4. Using a loaf pan as a mould, press mince mixture firmly into pan. Turn out meatloaf onto the prepared dish. Spoon combined canned and cherry tomatoes over meatloaf.
5. Bake uncovered for 1 hour or until cooked.
6. Serve with mashed potatoes, if desired
Suitable to freeze, not suitable to mircowave.

These are amazing muffins. I would suggest also dong lemon/white chocolate combo which I love.
Orange Chocolate-Chip
1¾ cups plain all-purpose flour
1½ tsp baking powder
¾ cup sugar
1 tbsp orange zest
1 cup dark chocolate, roughly chopped
1 cup plain vanilla yogurt
60g unsalted butter, softened (1/4 c)
2 eggs
2 tbsp orange juice

Preheat oven to 180°C.
Place muffin liners in a 12-cup tin.
Place the flour, baking powder, sugar, orange zest, and chocolate in a large bowl and mix to combine.
In another smaller bowl, combine the yogurt, butter, eggs and orange juice until well blended.
Add the wet mixture to the dry mixture and mix until just combined.
Spoon the batter carefully into the muffin tins
Bake for 35-40 minutes or until the tops are golden and cooked when tested with a skewer.
Remove from oven and cool for 5 minutes. They are ready to serve straight away.

We have a day like memorial day here in new zealand called anzac day and it is this friday and it is the day where we here in new zealand and australia remember the fallen soliders who died in the wars of the past and there are a small group of returned soliders who are slowly passing on , however i have an anzac biscuit recipe for you all something of a kiwi taste for you all in the states.

ANZAC BISCUITS (Cookies)

100g butter
1 tablespoon golden syrup
1/2 cup sugar
3/4 cup coconut
3/4 cup rolled oats
3/4 cup plain baking flour
1 teaspoon baking soda
1 tablespoon hot water

Melt butter and syrup together in a large saucepan. Cool, Mix sugar, coconut, rolled oats and flour together. Stir into saucepan. Dissolve soda in water and mix in. Placed rounded teaspoonsful on a greased oven-tray. Bake at 180oC for 15 minutes , or until golden.
Makes 36.

A taste of New Zealand for you all, by the way our special guest last week at church had an anzac biscuit that one of the mums at the mums group where i look after the children when the mums are together getting equipped and encouraged and share and she loved it since she loves the way my country is so patrictoic , just like you americans

Ok here we go this first one is a recipe that is great for dinner, this is the one i refer to as pie with a difference.

French Beef & Mushroom Cottage Pie

Ingredients

1 tbsp oil
1 onion, peeled and finely chopped
500g minced beef
130g can tomato paste
550g can French Mince Simmer Sauce
2 cups chopped mushrooms
1 cup frozen peas and corn (approx)
1 cup or half a can water
500g packet potato pom poms
1/2 cup grated tasty cheddar cheese

Directions

1. Heat the oil in a frying pan and brown the onion and minced beef, breaking up the beef with a fork as you go to ensure even sized pieces.
2. Add the tomato paste and cook, stirring over a moderate heat until it has darkened in colour to deep brown shade. This takes about 5 minutes and adds a wonderful rich flavour to the pie.
3. Add the Country French Mince Simmer Sauce, mushrooms, mixed peas and corn , and water.
4. Stir, cover and simmer for 15 minutes. Stir occasionally.
5. Transfer to 6 cup capacity oven proof dish and top with pom poms and sprinkle over the grated cheddar cheese.
6. Bake at 220oC for about 15 - 20 minutes until the topping is golden, the cheese bubbling and the pie hot and delicious .

A hint if you like me get teary eyed when peeling and chopping onions here is a tip that i do quickly peel the onion and then chop the onion then to finely chop the onion place the chopped onion into the food processor to finely chop.

The difference about this pie there is no pastry .

Now that we have had dinner here is a great dessert

Chocolate Brownie

250g Butter
1 cup Chocolate Melts (Optional)
1/2 cup Cocoa
1 1/2 cups Sugar
4 Eggs
1 cup Flour
1 tsp Baking Powder
1 tsp Vanilla Essence

Melt Butter and chocolate melts (if using them) in a pot, add Cocoa, mix well . Remove from heat, add Sugar.

Then add one egg at a time, mixing well. Fold in Flour and Baking Powder. Add Vanilla Essence.

Pour mixture into a brownie tin and bake @ 180oC for 25- 35 minutes or until it bounces back when lightly pressed .

Enjoy these tasty recipes.

Oh no french simmer sauce you could sub with any other simmer sauce it is really tasty and it is perfect for the pie but if you can't find it use another simmer sauce

Oh the brownie is a great dessert perfect with ice cream . and it comes out once baked as a cake

If you want to you can add potatoe hash browns in the dish before you add the main meat filling to give the pie a hash brown base i do that sometimes first while the filling is simmering take a packet of hash browns and place them in the dish i suggest that the browns are layered closely together. there will be potatoes on top and potatoes on the bottom

Hey Everyone, Here is are the two carrot cake recipes along with cream cheese icing one for the oven and one for the mircowave oven

Carrot Cake (Oven )

150g butter
1 tablespoon grated orange rind
1/2 cup brown sugar
2 eggs
1 cup grated carrot
1 cup plain baking flour
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons baking powder
2 tablespoons milk

Cream butter, orange rind and sugar until light and fluffy. Beat in eggs one at a time, beating well after each addition. Stir in carrot. Sift in flour, cinnamon , nutmeg and baking powder into creamed mixture. Stir to combine , Stir in milk. Spoon mixture into a well greased and lined 20 cm ring tin. Bake at 180oC for 35 minutes or until cake springs back when lightly touched. Leave in tin for 10 minutes before turning out onto a cooling rack. When cold ice with Cream cheese icing if desired .

Cream Cheese Icing

2 tablespoons butter, softened
1/4 cup cream cheese
1 cup icing sugar
1/2 teaspoon grated lemon rind

Beat butter and cream cheese until creamy. Mix in icing sugar and lemon rind, beating well to combine .

And now for the microwave carrot cake recipe

1 cup wholemeal flour
2 teaspoons baking powder
2 teaspoons mixed spice
3/4 cup brown sugar
2 cups grated carrots
1/2 cup oil
2 eggs
1/4 cup chopped walnuts

Icing
75g butter
150g cream cheese
1 teaspoon vanilla essence
2 cups icing sugar

Sift flour, baking powder and mixed spice into a mixing bowl. Add sugar, mix to combine. Beat carrots, oil and eggs together. Pour into mixing bowl, mix with a fork to just combine. Pour batter into a lined 20 cm mircowave proof ring mould. Cover and cook, elevated on a mircowave proof rack on Medium (70%) for 8-9 minutes until top is dry and cake is pulling away from the sides of the dish. Allow to stand for 5 minutes before turning onto a cooling rack. When cold ice with cream cheese icing. Sprinkle with Walnuts.

Icing
Beat butter, cream cheese and vanilla together until soft . Sift icing sugar. Gradually beat icing sugar into cream cheese mixture.

Neenish Tarts

125 g butter, softened
1/2 cup sugar
1 egg
2 cups plain baking flour
1 teaspoon baking powder
pinch salt
White icing
Chocolate icing

Filling
1/2 cup icing sugar
100g butter, softened
1/2 cup sweetened condensed milk
2 tablespoons lemon juice

Icing
2 cups icing sugar
1/4 cup teaspoon butter
2 tablespoons water, approximately
1/4 teaspoon vanilla essence

Sift icing sugar into a bowl. Add butter, Add sufficient water to mix to a spreadable consistency. Flavour with vanilla essence.

Chocolate icing
Sift 1 tablespoon cocoa with the icing sugar

Cream butter and sugar until light and fluffy. Add egg and beat well. Sift flour , baking powder and salt together. Mix into creamed mixture, stirring well. Turn mixture out onto a lightly floured board and knead well. Chill pastry for 15 minutes. Roll out pastry to 2mm thickness. Cut out rounds using a 7cm scone or biscuit (cookie) cutter and line patty tins. Prick bases. Bake at 180oC for 12 minutes or until cooked. Cool pastry cases and fill with filling. Allow filling to set. Ice one half of each tart with white icing and the other half with chocolate icing. Makes 30

Filling
Sift icing sugar into a bowl. Add butter, condensed milk and lemon juice. Beat until smooth.

The drummer in my churches worship team performs a wonderful drum solo to announce the arrival of the requested lemon cake recipe here it comes

Lemon Cake

You'll need

3 lemons

125g butter

1 cup caster sugar

3 eggs

150g sour cream

1 cup flour sifted

1 tspn baking soda

1/4 cup white sugar

And now

Preheat the oven to 180oC. Line and grease a 20cm ring tin.

Finely grate the lemon rind and set aside.

Squeeeeeeze out the juice and save for later.

Cream the butter and caster sugar. Add the eggs, lemon rind and sour cream. Fold in the flour and baking soda.

Place the mixture in the prepared tin, and bake for 30 - 40 minutes until firm.

In the meantime, prepare the syrup by boiling the lemon juice and white sugar.

Pour the syrup over the hot cake .

When the cake has cooled. Turn out and dust with icing sugar and serve .

OHH so delicious Enjoy !

Tomorrow I'm going to make the lemon cake. They have everything here except the sour cream which I shall buy in the a.m. I will cut it here, wrap it and take the rest home on Fri. as I won't be able to bake there with no a.c. That will be my sweet of the day. After that it'll be back to store bought things until the weather cools off - sometime in Sept. maybe!

Tennis Cake

175 g butter
1 1/2 cups sugar
1/2 teaspoon vanilla essence
1/2 teaspoon almond essence
2 cups plain baking flour
1/4 teaspoon cinnamon
1 teaspoon baking powder
4 eggs , beaten
3/4 cup raisins
1/2 cup glace cherries, chopped
2 tablespoons angelica , chopped
1 teaspoon grated lemon rind
2 tablespoons lemon juice

Cream butter and sugar until light and fluffy. Add vanilla and almond essences, Sift flour, cinnamon and baking powder together . Add eggs alternately with sifted dry ingredients. Mix in raisins , cherries , angelica, lemon rind and juice. Spoon mixture into a greased and lined 22cm round cake tin. Bake at 160oC for 1 1/4 , 1 1/2 hours or until an inserted skewer comes out clean when tested . Leave in tin for 10 minutes before turning out onto a cooling rack.

Lemon cake is done! I LOVE it. The recipe is simple and easy for me to make and the cake batter itself is so good. I may not have to buy boxed cake mixes any longer. Had a piece and will wrap what I don' t eat here and take it home with me. One minor problem: I'm not use to cooking with electric and it got a little too done. It was not done one minute and too done the next! I will be making this again after summer as I love lemon all year long.

Hey recipe fans

Impossible Pie

2 eggs
1/4 cup margarine
1 cup white sugar
1/2 cup flour
1/4 tsp. salt
1/2 tsp. baking powder
2 cups milk
1 cup coconut
1 tsp.vanilla

Place all ingredients in a blender at one time and blend until well mixed. Place into a buttered 10 inch pie dish. Bake in a 350oF oven for 1 hour. When done the crust will be on the bottom , custard in the middle and coconut on the top , right where they all belong .
Moral , nothing is impossible .

Now a couple of treats

Rice Krispie Biscuits (Cookies)
3 large MARS bars, chopped
3 oz butter or margarine
4 oz Rice Krispies
6 oz dark chocolate

Melt the mars bars and margarine in a sauce pan very slowly until it's a messy goo! Add the Rice Krispies and stir in well. Press into a square tin or a lasagne dish. When cold spread with melted dark chocolate .

Chocolate Streusel Bars

1 3/4 cups flour
1 1/2 cups powdered sugar
1/2 cup cocoa
1 cup cold margarine
1 8oz package cream cheese, softened
1 14oz can sweetened condensed milk
1 egg
2 tsp. vanilla
1/2 cup. chopped nuts

Combine flour, sugar and cocoa. Cut in margarine until crumbly, mixture will be dry. Reserve 2 cups crumb mixture. Press remainder firmly on bottom of 13 x 9 inch baking pan. Bake for 15 minutes at 350 o F.

Beat cheese until fluffy. Gradually beat in sweet condensed milk until smooth. Add egg and vanilla, mix well. Pour over prepared crust. Combine nuts with resevered crumbs mixture, sprinkle over cheese mixture. Bake at 350 o F for 25 minutes or until bubbly . Cool then chill. Cut into bars . Store covered in refrigerator.

TGIF’s Black Bean Soup

2 tablespoons vegetable oil
3/4 cup diced onion — white onion
3/4 cup diced celery
1/2 cup diced carrot
2 tablespoons minced garlic
3 cups dried black beans
4 cups chicken stock
2 tablespoons apple cider vinegar
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon liquid Barbecue Smoke — optional
shredded cheddar cheese – for accompaniment
sour cream — for garnish

Note: Don’t skip the liquid Barbecue Smoke. The bottle is spendy, but a little goes a long way, so it will last you a really long time. And the smoke is what really makes the soup!

Rinse dry beans and discard any rocks. Soak beans all day the day before you want to make your soup. Put them in the crockpot on low with enough water to cover them before you go to bed, and let them cook all night.

In the morning, drain beans and remove from the crockpot. Store in the refrigerator until ready to use.

Heat oil in a large saucepan over medium/low heat. Add onion, celery, carrot, and garlic to the oil and simmer slowly for 15 minutes or until the onions are practically clear. Keep the heat low enough that the veggies don’t brown and be careful not to burn the garlic or it will be bitter. While you cook the veggies, measure 3 cups of the beans into a food processor with 1 cup of chicken stock. Puree on high speed until smooth.

When the veggies are ready, pour the pureed beans, the whole beans, the rest of the chicken stock, and every other ingredient in the list (down to liquid smoke), into the pot.* Bring mixture to a boil, then reduce heat and simmer uncovered for 50 to 60 minutes or until soup has thickened and all the ingredients are tender. Serve topped with the cheese and a dollop of sour cream, if desired.

*If I’m going to be warming this in the crockpot all day, I add all the ingredients except for the whole beans to the crockpot at this time. I add the whole beans an hour or two before dinner, so they don’t get too mushy.

I serve this soup with tortilla chips and a salad and call it dinner. What could be easier than that?

Hershey Brownies

4 eggs
1 cup sugar
1/2 cup butter. melted
1 can Hershey's chocolate syrup
1 cup flour

Frosting

6 Tbsp. Milk
6 Tbsp. Margarine
1 cup sugar
1/2 cup chocolate chips

Beat eggs well. Add sugar, butter, chocolate syrup and flour. Mix well. Put in greased 9x13 inch pan. Bake at 350oF for 30 minutes. Frost when cool.

Frosting

Boil Milk , sugar and margarine for 30 seconds. Add chocolate chips and beat until melted. Spread on brownies .

Louisiana Mardi Gras

1 30 oz can fruit cocktail
1 cup brown sugar
1 pkg. lemon cake mix

1/2 cup butter
1 cup water

Drain fruit and reserve liquid. Add 1/3 cup syrup. Melt butter in 9x13 inch pan. Add sugar, arrange fruit on top of sugar. Prepare mix as directed , using 1 cup water and syrup. Pour over fruit. Bake at 350oF for 45 to 50 minutes until done. Cool 5 minutes and invert on large plate. Serve with ice cream.

Meringue Mints

2 egg whites
pinch of salt
1/2 tsp. cream of tartar
3/4 cup sugar
1/2 tsp. vanilla
drop of green food coloring
1 packet of mint chocolate bits

Beat egg whites until firm stiff peaks form. Gradually add sugar, vanilla and food coloring. Beat until glossy. Fold in mint chocolate bits. Drop from 1/4 tsp. onto lightly buttered cookie sheet. Put in oven , turn oven off. Leave in overnight .

Now due to the ever increasing prices of food in the supermarket lately here is a muesli recipe for those who are finding their usual store brought brand expensive

Bircher Muesli

Serves 4

1 cup oats toasted
1 cup skimmed milk
2 apples, grated
1/2 cup natural honey
4 oz walnut and pecans, chopped

4 strawberries , quartered
1/2 cup assorted blueberries and raspberries
1/2 cup honey dew melon , diced
1/2 cup peach , pear , plum or grapes , diced.
1/2 cup of whipping cream

Soak toasted oats with skimmed milk and honey overnight. Next morning fold in nuts and fruit, whip cream until stiff and fold into muesli mix .

Cheese and Celery Loaf from Ireland

1 lb. self-raising flour
1 tsp. salt 11/2 oz. butter or margarine
3 large sticks of celery , finely chopped
6 oz Irish cheddar cheese (or other cheddar)
1 clove garlic, crushed or garlic salt
1 egg
9 fluid oz. milk

Rub the butter into the flour and salt. Add the celery, cheese and garlic to the flour mixture. Beat the egg and milk together add gradually to the flour mixture, mixing to a soft dough. Knead lightly . Turn into well-greased loaf tin capacity. Bake at 425oF (210oC) for about 55 minutes . Serve sliced and buttered.

And now for those who are willing and like curries here is a curry recipe

Brendan's Curry

Oil
Onion
about a Tbsp Mixed Spices (Indian) and Yellow Curry Powder
1 decent pack of Lamb flaps (cut with cleaver to bite size pieces and leave on bone)
about 2 Tbsps cup Raw Sugar
Salt
Potatoes (peeled)
about 1/4 cup malt vinegar
about a cup of water
Rice
Naan Bread
Yoghurt or american spelling yogurt (optional)

In a frying pan, gently cook the onion, spices and curry powder in oil for 10 - 15 mins .
Add the meat . Add sugar and salt to taste
In a big pot , add the browned meat and spices , potatoes and slowly add vinegar , water and extra curry powder as required . (to taste).
Cook on very low heat for as long as you can 3-4 hours is best.
You want a consistency thicker than milk, but not quite saucey, so add water as required.
Serve with rice and naan (and yogurt if you want).
Also enjoyed the next day.

Coffee Cupcakes

Makes 12 Preparation 20 minutes Cooking 25 minutes

125g butter, chopped at room temperature
2/3 cup brown sugar
2 eggs
2 cups self-raising flour, sifted
1/2 cup sour cream (see tip)
1/2 cup strong black coffee , cooled.

Coffee Icing
1 cup icing sugar, sifted
10g butter
2-3 tablespoons hot strong black coffee
12 pecans , to decorate

1 Preheat the oven to moderate 180oC . Line a 12 hole muffin pan with paper patty cases.
2. In a large bowl , using an electric beater, cream butter and sugar together until light and fluffy.
3. Add eggs one at a time, beating well after each addition. Fold in flour alternately with sour cream and coffee beginning and ending with flour . Spoon mixture into paper cases until 2/3 full.
4. Bake for 20-25 minutes until cooked when tested. Cool in pan for 5 minutes. Transfer to a wire rank to cool completely.
5. Coffee Icing Combine icing sugar and butter in a small heatproof bowl. Stir in enough coffee to make a smooth paste, Place over a saucepan of simmering water and heat gently , stirring for 2-3 minutes until mixture is a spreadable consistency. Spread over cooled cakes. Top with pecans.

Top Tips
If preferred, use buttermilk or natural yoghurt in place of sour cream, Store in an airtight container . These cupcakes also freeze well.

Malteser Cupcakes

Makes 12 Preparation 15 minutes Cooking 25 minutes

125g butter, chopped at room temperature
2/3 cup brown sugar
1 teaspoon vanilla extract
2 eggs
13/4 cups self raising flour, sifted
2/3 cup milk
45g packet Maltesers

Chocolate Glace icing
13/4 cups icing sugar
1/4 cup cocoa powder
15g butter
1-2 tablespoons hot water
45g packet Maltesers , roughly chopped

1 Preheat oven to moderate 180oC , Line a 12 hole muffin pan with paper patty cases.
2. In a large bowl, using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla
3. Add eggs, one at a time beating well after each addition . Fold in flour alternately with milk beginning and ending with flour . Fold in Maltesers. Spoon mixture into paper cases until 2/3 full.
4. Bake for 20-25 minutes until cooked when tested (see tip) Cool in pan for 5 minutes . Transfer to a wire rack to cool completely .
5 Chocolate Glace Icing Sift icing sugar and cocoa into a bowl . Beat in butter and enough water to make a smooth spreadable consistency. Spread over cooled cakes. Top with Maltsers

Top tip
To test whether cakes are cooked, insert a skewer into one . If it is clean and dry when removed the cakes are cooked.

White Chocolate Ganache
150g white chocolate , chopped
1/4 cup thickened cream
candy floss , to decorate (see tip)(for all my american friends we call cotton candy , candy floss, so i will say cotton candy for you )

1 Preheat oven to moderate 180oC. Line a 12 hole muffin pan (see tip)with paper patty cases.
2. In a large bowl , using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla.
3. Add eggs one at a time beating well after each addition . Fold in flour alternately with milk beginning and ending with flour. Fold in choc bits. Spoon mixture into paper cases until 2/3 full.
4. Bake for 20-25 minutes until cooked when tested , Cool in pan for 5 minutes . Transfer to a wire rack to cool completely .
5. White Chocolate Ganache , Combine chocolate and cream in a heatproof bowl. Heat over a saucepan of simmering water , stirring until chocolate has melted . Spread over cold cakes . Decorate with candy floss (cotton candy)
Top Tips
We used a standard muffin pan- if you use mini muffin pans the mixture will make about 24. Reduce cooking time to 14 minutes. If candy floss (cotton candy) is unavailable use white chocolate drops or shavings . These cake are best iced when ready to eat. If you have any left over , store them in an airtight container , and in the fridge in hot weather .

Apple and Pear Cupcakes

Makes 12 Preparation 15 minutes Cooking 25 minutes

2/3 cup milk
1 green apple peeled, cored, chopped
1 pear, peeled, cored, chopped
Passionfruit Glace Icing
1 1/2 cups icing sugar
2 tablespoons passionfruit pulp (2-3 passionfruit , pulp strained)
1 teaspoon soft butter
silver cachous, to decorate (see tip )

1. Preheat oven to moderate 180oC . Line a 12 hole muffin pan with paper patty cases.
2. Using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla
3. Add eggs one at a time, beating well after each addition . Fold in flour alternately with milk beginning and ending with flour. Fold in fruit. Spoon mixture into paper cases until 2/3 full.
4. Bake for 20=25 minutes until cooked when tested . Cool in pan for 5 minutes Transfer to a wire rack to cool completely .

Let me know how they turn out , i have just finished baking and i did one chocolate brownie and totally blotched it up big time it went everywhere after i took it out of the oven it oozed out of the middle and then the top slid off messy messy but the chocolate chip cheese cake is ok burnt on top but fine and i baked a second brownie heaps better than the swamp of the first one .

Ah, my specialty is creamy ranch chicken. Its pretty simple to make, and I always have homemade scalloped potatoes and green beans with it.

What you need is:
1 bag of boneless skinless chicken breasts-Bake till done, drain the juice.

The topping:
2 packs of cream cheese-leave out to get soft
Ranch powder-no set amount due to people liking different amounts
1 or 2 cups of Miracle Whip
1 or 2 cups of Buttermilk Ranch dressing
Mix in a bowl till it's to your desired thickness.

When the chicken is done, spread over and bake for 3-5 min.

The scallopped potatoes:
Peal and slice the taters, or leave the skins on, your choice. Put a half stick of butter on the bottom of the dish and add about a 1/2 cup of milk with it. Put in taters, cover with foil and bake for about 15min and take out and stir. Then add real bacon bits and cheese and bake till done.

I made this the other night for my best friend and his mom and her best friend and they all loved it. Its a hit with anyone who loves chicken and ranch.

Ah, kewl. Try putting the chicken in a slow cooker and season it with the ranch powder first. Im gonna try that the next time I make it.

Thats entirely up to you. If its just for you, about 3 or 4 good size to make enough, or if its more than you, just go from there. This recipie just follow, but you choose your portions and how much you want to make. Its really good food

A winner like my chocolate brownie recipes , here is that rocky road slice

Rocky Road Brownie Slice

Makes 16, Preparation 20 minutes (plus chilling time)
Cooking 20 minutes

150 g dark chocolate , chopped
125 g butter, chopped
2/3 cup caster sugar
1 egg, lightly beaten
3/4 cup plain flour
1/4 cup self-raising flour, sifted

Rocky Road
125 g mixed marshmellows , chopped
1/2 cup red glace cherries, halved
1/2 cup mixed unsalted nuts, roughly chopped
1/3 cup desiccated coconut
500 g milk chocolate, chopped , melted

Top tip
Melt chocolate in a mircowave safe bowl in the mircowave oh high (100 per cent) power in 30 second bursts, stirring after each burst .

1. Preheat oven to moderate 180oC. Lightly grease and line an 18x28cm slice pan extending paper 2cm above edge of pan.

2. Combine chocolate and butter in a small saucepan on low . Stir until smooth . Cool for 10 minutes .

3. Stir through sugar and egg. Fold in flour . Spread mixture into prepared pan . Bake for 15 -20 minutes until firm. Cool to room temperature .

4. Rocky Road In a clean bowl , combine marshmellows , cherries ,nuts and coconut . Stir in chocolate.

5. Spoon chocolate mixture evenly over base . Chill for 1 hour until firm.

6. Cut into squares with a hot knife . Store in an airtight container in the fridge . Enjoy , Enjoy .

I have another recipe for Hazelnut , pecan and raspberry friands , i will submit this soon.

Ok here is a recipe that i am sure will be popular

Cinnamon Custard Cake

Ingredients
For the custard:

3 tbsp custard powder
2 tbsp caster sugar
1 tsp ground cinnamon
250ml milk
25 g butter
2 tsp vanilla essence

For the cake
250 g butter
1 cup caster sugar
4 eggs
1 1/2 cups self-raising flour
1 tsp ground cinnamon
3/4 cup custard powder
icing sugar to dust

Method

To make the custard, place custard powder, sugar , cinammon and milk in a small saucepan and stir as it comes to the boil and thickens. Remove from heat and beat in the butter and vanilla. Cover surface with cling film and allow to cool. Preheat the oven to 180o deg. Spray a 23 cm spring form tin with baking spray and line the base with non stick baking paper.

To make the cake , beat the butter and sugar until pale and creamy. Add the eggs, one at a time, and beat well. Fold in the flour, cinnamon and custard powder. Spread half the mixture into the tin. Carefully top with a layer of custard then add the remaining cake mixture. This is a bit of a gooey process but just kind of blob it in. Bake for 40-50 minutes . Cool in the tin on a wire rack. Carefully remove from the tin when cold and dust with icing sugar to serve.

If you don't have the time to make and cool the custard you can stir the cinnamon into store brought custard instead.

Jolly Joel's Christmas Hot Dogs

Feeds four people or two really hungry people

INGREDIENTS

Oil for fry pan - just a dab
4 x Hot Dog rolls (for my american friends hot dog buns )
4 x Frankfurters
Mozzarella Cheese
2 x Rashes Middle Bacon
Tomato Sauce

Directions

*Pre-heat your oven. I can't stress how important this if you miss this , then you have to wait another 10mins until or oven is nice and hot so turn it on. About 180 degrees is a good temperature.
* Get knife out of draw
*Dice bacon into little pieces
*Cook bacon in fry pan
*Boil frankfurters in water
*Cut hot dog rolls (buns) open
*Once frankfurters are cooked put in hot dog roll (bun)
*Get cheese grater out of cupboard
*Grate some cheese
*Now sprinkle the cheese and bacon over the hot dog , it looks pretty good huh?
*Next you open the oven door and put the hot dog rolls (buns)
in . You only need to put the rolls (buns) in until the cheese has melted.
*Cover in Sauce
And there you have it Christmas Hot Dogs

Ok, well... I am no chef but here is my recipe for a super fattening dessert my Daddy taught me years ago. It sounds weird but TRUST ME - just try it!

Chocolate Toast :P

1. get you some white bread

2. butter it on one side

3. take a spoonful of Nestle' Quik and sprinkle the chocolate over the buttered bread

4. Then sprinkle a pinch of sugar over each piece of bread

5. Put the bread into the oven at about 350 - just long enough for the butter to melt.

Then enjoy!!! I know it sounds ridiculous - but just try it guys.

I told you - it's really, really fattening. But it's a great treat every now and then. Especially when you have a sweet tooth and there's nothing sugary in your pantry.

Would anyone happen to have a recipe for eggplant parmesan that they actually like ?

My family doesn't like veggie dishes, but my mom gave me this purple freak of the garden and I have to use it.

Eggplant parmesan was the only recipe I could think of that would disguise it good enough.

I don't have a very large ingredients list either...bad grocery month. Pleh

I have the basics....eggplant:P , bread crumbs, egg, spaghetti sauce, various types of noodles, and of course cheese.

Any ideas would be greatly appreciated.

Saw a recipe on Food Network this weekend that looked interesting. Robin Miller breaded and fried the eggplant then took the individual pieces and placed them on a cookie sheet and dabbed each with some marinara sauce, mozzarella cheese and parm and put them in the oven. You can probably search the actual recipe online. It looked good. My biggest complaint about egplant parm is that the eggplant is soggy and it looked like it would not be so much this way.

Chilli recipes i have two for everyone

Chilli con carne

1 tablespoon oil
2 onions, chopped
1 clove garlic, crushed
1 green pepper , chopped
500 g mince
1 1/2 teaspoons chilli powder
1 cup water
300 g can tomato paste
1/4 teaspoon oregano
salt
465 g can red kidney beans

Heat oil in a large frying pan or saucepan. Add onions, garlic and green pepper. Cook until onion is clear. Stir in meat and cook until meat is browned. Add chilli powder, water, tomato paste, oregano and season with salt to taste. Bring to the boil, stirring constantly. Reduce heat and simmer gently for 30 minutes or until mixture is quite thick. Drain beans. Add to pan. Continue cooking for a further 10 minutes, stirring occasionally Serves 4-6 .

Vegetarian Chili

Serves 8

This is a wonderful casual diner party recipe. A lot of preparation but well worth the result. Any leftover chili can be frozen. Enjoy

3 cups red kidney beans, drained and rinsed
1 Tbsp , vegetable oil
3 medium onions, chopped
3 large celery ribs, cut into 1/4 dice
1/4cup garlic minced
3 large carrots , finely chopped
2 cups cabbage . finely chopped
1/2 lb. mushrooms, finely chopped
2 medium red peppers, finely chopped
2 medium green peppers, finely chopped
1/3 cup chili powder
1 Tbsp. unsweetened cocoa powder
1 Tbsp.sugar
1 Tbsp. cumin seeds
1 Tbsp, plus 1/4 tsp. Oregano
2 tsp. fennel seeds
1 tsp. thyme
1/2 tsp.cayenne pepper
1/2 tsp. cinnamon
1 Tbsp. salt
1/2 tsp. fresh ground black pepper
1 can Italian peeled tomatoes, with their liquid
2 Tbsp. soya sauce
2 Tbsp. dry sherry
1 tsp. hot pepper sauce
3\4 cup sour cream
1 1/2 cups scallions, sliced
1/4 lb. cheddar, shredded Phew!!!!!!!!

Heat oil in a large flameproof casserole over moderate heat. Add onions and celery and saute until onions are soft (6 -8 mins). Add garlic and cook for 1 minute longer . Add carrots, cabbage and mushrooms to the casserole and cook, stirring occasionally until vegetables are tender (about 10 mins). Add red and green peppers and cook another 5 to 8 minutes. Stir in chili powder, cocoa, sugar , cumin, 1 Tbsp of oregano, fennel, thyme, cayenne pepper , cinnamon , salt and 1/4 black pepper. Stir in the tomatoes, break up with a spoon. Add 4 cups of water . Simmer over low heat, stirring occasionally until rich and thick about 2 hours . Remove from heat. Cool to room temperature. Cover and refrigerate overnight. Reheat over low heat. Add all remaining ingredients except sour cream, scallions and cheese which should be served in separate containers on the table.

Here is a pumpkin soup recipe for you all

750 g pumpkin, peeled and chopped
1 large potato , chopped
1 onion, chopped
4 cups chicken stock
salt
black pepper
nutmeg

Put pumpkin , potato and onion into a large saucepan. Add stock, Cover, bring to the boil and cook until vegetables are soft. Puree vegetable mixture in a blender or push through a sieve. Season with salt, pepper and nutmeg to taste. For extra flavour , a ham hock or bacon bones can be added when cooking the pumpkin , Serves 6
That one would be perfect to make with any leftover thanksgiving pumpkin

Here is one that is a classic here in new zealand that i am sure that my american friends would love to make

Bacon and egg Pie
2 sheets pie rolled flaky pastry
1 onion, chopped
1 cup chopped bacon
1\2 cup mixed vegetables
2 tablespoons spicy chutney
6 eggs
milk
Use 1 sheet of pastry to line a 20cm square shallow cake tin. Sprinkle onion, bacon and mixed vegetables evenly over pastry. Dot the chutney on top, Break eggs evenly over pricking the yolks so they run slightly, Carefully lift second sheet of pastry over filling. Brush top with milk . Bake at 200oC for 40 minutes or until well risen and golden. To serve cut into squares. Serve hot or cold serves 6.

Now for something mexican

Chicken Enchiladas
400 g can tomatoes in juice
113 g can jalapeno peppers
1 teaspoon ground coriander
1/2 teaspoon salt
250 g pot sour cream
2 tablespoons oil
2 cups chopped cooked chicken
1 small onion , finely chopped
3/4 teaspoon salt
12 cooked flour Tortillas
3/4 cup grated tasty cheese

Put tomatoes in juice, jalapeno peppers, coriander and salt into a food processor or blender. Process until smooth. Add sour cream and process to combine. Set aside. Heat oil in a saucepan. Add chicken , onion and salt. Cook, stirring constantly, unitl onion is clear. Dip each tortilla in tomato mixture, draining excess off. Spread a little of the chicken mixture into the tortilla, Roll up like a sponge roll. Place seam side down in ovenproof dish. Repeat with remaining tortillas and chicken. Pour remaining tomato mixture over. Sprinkle with cheese. Cover dish with lid or foil. Cook at 180oC for 30 minutes. Remove lid then grill until golden Serves 6 .

There are more to come and it is great in these uncertian times that we have this recipes thread so if things get even more terrible we can do some cooking to keep our pantrys and fridges filled

Very excellent

Beef Casserole

1 kg chuck or blade steak
1/4 cup plain baking flour
2 tablespoons oil
1 large onion, chopped
4 cups beef stock
2 carrots sliced
salt
black pepper
1 bay leaf
sprig thyme
sprig parsley

Trim fat from meat and cut into 5 cm cubes. Coat meat in flour. Heat oil in a heavy based saucepan. Add onion and cook until golden. Using a slotted spoon, remove onion and place in a casserole dish. Add one quarter of meat and quickly brown on all sides. Remove from pan. Repeat with remaining meat, one quarter at a time. Place meat in dish with onions. Gradually add stock to saucepan, stirring, Bring to the boil, Add carrots. Season with salt and pepper to taste. Make a bouquet garni with bay leaf, thyme and parsley. Add bouquet garni and liquid to casserole dish. Cover and cook at 160oC for 11/2 hours or until meat is tender, Remove bouquet garni before serving Serve with dumplings
Serves 6-8
Beef and Mushroom Casserole
Replace half the beef stock with red wine, Add 1/4 cup tomato puree and 1 cup sliced mushrooms
Beef and Mustard Casserole
At end of cooking time, stir in 1 tablespoon wholeseed mustard
Beef and Pepper Casserole
Add 1 chopped red or green pepper when cooking the onions

Sage Sausage and Chestnut Stuffing
2 onions, diced
4 stalks celery . diced
1 red pepper, diced
2 apples . peeled and diced
2 pounds spicy sausage meat, no casing
2 pounds chestnuts roasted , then peeled
2 bunches fresh sage, chopped fine, no stems
poultry seasoning, salt and pepper to taste
1 pound butter
2 loaves bread, cubed and dried or toasted dry
1 can chicken stock

Saute onions and sausage meat in butter till well browned, add celery, peppers, apple and chestnuts chopped medium til softened. Add bread little by little and moisten with chicken stock to desired moistness. Season with sage, poultry seasoning, salt and pepper

Serve with cooking liquid on the side as au jus.

Make the cookies: Preheat oven to 350 degrees. Line two baking sheets with parchment paper or a nonstick baking mat; set aside.
In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves; set aside. In another large bowl, whisk together brown sugar and oil until well combined. Add pumpkin puree and whisk until combined. Add eggs and vanilla and whisk until well combined. Sprinkle flour mixture over pumpkin mixture and whisk until fully incorporated.
Using a small ice cream scoop with a release mechanism, drop heaping tablespoons of dough onto prepared baking sheets, about 1 inch apart. Transfer to oven and bake until cookies are just starting to crack on top and a toothpick inserted into the center of each cookie comes out clean, about 15 minutes. Let cool completely on pan.
Make the filling: Sift confectioner' sugar into a medium bowl; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat butter until smooth. Add cream cheese and beat until well combined. Add confectioners' sugar and vanilla, beat just until smooth. (Filling can be made up to a day in advance. Cover and refrigerate; let stand at room temperature to soften before using.)
Assemble the whoopie pies: Line a baking sheet with parchment paper and set aside. Transfer filling to a disposable pastry bag and snip the end. When cookies have cooled completely, pipe a large dollop of filling on the flat side of half of the cookies. Sandwich with remaining cookies, pressing down slightly so that the filling spreads to the edge of the cookies. Transfer to prepared baking sheet and cover with plastic wrap. Refrigerate cookies at least 30 minutes before serving and up to 3 days.

Roasted Pumpkin Seeds with Garlic

The main thing to remember here is that you have to do it all to YOUR taste...

Get your strained, washed, and clean seeds and put them in a saucepan with water. Put plenty of salt and allow to boil for 30-40 minutes. This will plump up your seeds and marinate the salt right through the shell. Next, spread them on a baking sheet and sprinkle salt, very liberally, over them. I used garlic powder to add some extra flavor and it came out amazing. Be sure to sprinkle the garlic powder over all the seeds. Put them in a preheated 350 degree oven until they're golden brown and thoroughly dried out. Some of the garlic may get quite a lot darker, but it fills your house with an amazing smell. Be sure the seeds are completely dry or they will taste stale. Enjoy!


Roasted Sweet Pumpkin Seeds

1 cup raw pumpkin seeds, rinsed and dried
6 tablespoons white sugar, divided
1/4 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 tablespoon vegetable oil

Preheat the oven to 250 degrees F (120 degrees C). Spread pumpkin seeds in a single layer on a baking sheet. Toast for 45 minutes, stirring occasionally, until dry and toasted. Larger seeds may take longer.
In a large bowl, stir together 2 tablespoons of white sugar, salt, and pumpkin pie spice. Set aside. Heat the oil in a large skillet over medium-high heat. Add the pumpkin seeds and sprinkle the remaining sugar over them. Stir with a wooden spoon until the sugar melts, about 45 seconds. Pour seeds into the bowl with the spiced sugar and stir until coated. Allow to cool before serving. Store in an airtight container at room temperature.

Coat a couple pounds of stew meat in meat tenderizer, and brown on all sides in peanut oil. Add the following in no particular order: One can diced tomatoes, one tomato can full of v8, couple pounds of your favorite frozen stew veggies, a couple of bay leaves, salt, pepper and worcestershire sauce to traste, and a can of cheap beer. Bring to a boil and simmer till beef is cooked through and the veggies are tender. Thicken with flour or cornstarch. Good with cornbread and buttermilk.

The BEST pumpkin cookies ever..............

I made these last night and they were amazing!

4 cups unsifted flour
2 cups oatmeal
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups oil
1/2 cup white sugar
2 cups brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups canned pumpkin
1/2 cup nuts
1/2 cup raisins

Combine flour, oatmeal, spices, and salt. Set aside.
Cream oil, sugars, egg and vanilla on medium speed of mixer for 2 minutes.

Add 1/4 cup Libby's canned pumpkin and mix 1 minute more.

Add the remaining flour and pumpkin alternately. Stir in nuts and raisins.

Drop by rounded teaspoonfuls onto lightly greased sheet baking sheets.

Bake at 350F for 15-20 minutes or until firm and lightly browned.

Makes about 5 dozen cookies.

Unbaked dough can be frozen in air tight container. Thaw in refrigerator and bake as directed.



I left out the nuts and raisins, they really aren't necessary.
